Pork Belly Burnt Ends


Ready to try something new on your smoker? Pork belly is a great choice! Pork belly might not sound very appealing, but trust us, it's soooo good! Ingredients

1 - 2 to 3 pound Rube's pork belly • 1/4 cup vegetable oil • 2 teaspoons Rube's Steakhouse Blend Meat Rub & Seasoning • 1/2 cup barbecue sauce • 3 tablespoons butter • 2 tablespoons honey

Directions Prepare smoker with the pellets of your choice (we like cherry), and set to 250º. With a sharp knife, cut pork into thick cubes, approximately 2 inches wide. Place cubes in a bowl, then add seasoning and vegetable oil. Mix with hands to coat. Arrange cubes on a stainless steel rack (we use a cookie cooling rack), then place in smoker. Allow to smoke for three hours. Remove from smoker and place cubes into a roasting pan. Add the butter, barbecue sauce and honey, and use tongs to mix well. Cover pan with foil, then return pork belly to smoker and smoke for one hour. Remove foil, and remove pan from smoker when sauce has thickened to your liking.
